The maps that didn't show the move from Main to Elm on Houston were simply not detailed enough. They gave a general idea of where the motorcade was going without the detail that ALL of the descriptions of the route contained.

The claim that the route was changed is a red herring. It was never intended to stay on Main to reach the Stemmons Freeway. If the motorcade was going to stay on Main, it would have had to bypass the Stemmons Freeway and go all the way to Industrial Parkway which could have taken them to the Trade Mart but that option would have made no sense as it would have been a longer and slower router. The Texas trip was on a tight schedule as they were  trying to jam as many appearances as possible into a tight time window.

Why do conspiracy hobbyists keep trying to make an issue of the motorcade route when it was the only one that made sense given the selection of the Trade Mart as the location for the luncheon.

Nope. There never was a route with a direct Main-to-Stemmons turn. As I've said, the interchange to the Stemmons on ramp is designed to prevent westbound traffic on  Main from entering the ramp.
