Mark Yes defendants have been convicted without bodies. But they are cases of bodies not being found. You bring out another interesting possibility, in that the Parkland staff testifying as to the death. Though I believe the removal of his body was a colossal screw up on the part of the people with JFK, i also realize that in any pretrial hearings there would have been enormous pressure on the courts to find a way to get around the problems created when they took his body back to Washington.
I note the apparent differences, in the descriptions of what transpired at Parkland. We have on one hand, multiple witness reports stating that the removal of his body was very heated, with guns drawn, etc., versus the single description of Cabell, who makes it all sound peaceful, diplomatic, and hunky-dory. After reading for years the reports that it was anything but, I find this Cabell version of the events hard to believe. But I also keep in mind that maybe the stories of guns being drawn and all that are just more CT lies, especially with the track record they long ago established. Urban legend, to be more polite.
